1 1/2 cups grated tasty cheese (I use reduced fat cheese)
1 1/2 tablespoons of grated Parmesan cheese
1 1/2 cups of plain flour
3/4 cup of butter or margarine
2 cloves of garlic (may need less if yours is strong and very fresh)
Sea Salt (use normal salt if you don't have sea salt)
Whizz all of your ingredients in a food processor, or use an electric stick mixer until your mixture is smooth. Alternatively, you could mix with a wooden spoon.
Turn your dough out onto some cling wrap, and use the wrap to roll it into a sausage shape as below. Wrap it up in the cling wrap, and place it in the freezer for half an hour to become firm.
Grind some sea salt over the top, and pop them in the oven for 10-13 minutes. I turn mine after 10 mins, then cook for another 3 mins as my oven doesn't heat evenly. Once they're lovely and golden on both sides, remove from the oven and transfer onto an airing rack when they're cool enough to touch. Bet you can't eat just one.
